You can summon any level monster you could ever summon. So level 52 mage can summon everything.

Ehm... how does he get Gargoyles next level?
Minotaur = level 40 summon, right?
Gargoyle = level 48 summon, right?
...
Or can you summon all monsters you had before...?
Like, when you're level 52 still summon Minotaur? O_o
Else I don't get why he says he gets Gargoyle next level...
